Welcome to the third episode of Book Snack Sat, where I’m bringing you a different bookish recipe every single Saturday.
Today we’re chatting about Queen of Someday by Sherry D. Ficklin (hint: it’s about Catherine the Great!!)
Recipe
Cupcake Ingredients
3/4 cups of flour
1/2 cup + 1 tablespoon of sugar
1/2 teaspoon of baking powder
1 teaspoon of baking soda
2 eggs
9 tablespoons of butter
2 teaspoons of pure vanilla extract
2-3 tablespoons of milk
Cupcake Directions
Slowly mix all ingredients into a bowl, with the exception of the milk, which should be added toward the end, one tablespoon at a time.
Bake for 15-20 minutes (mine were well done at 15 mins) at 400 degrees.
Icing Ingredients
1 stick of softened unsalted butter
1/4 teaspoon of salt
2 cups of powdered sugar
1 teaspoon of pure vanilla extract (use clear so that it does not change the color of your icing)
1-3 tablespoons of milk
Icing Directions
Use a medium bowl in your mixer to combine the powdered sugar and softened butter. To soften butter, put in microwave for 15 seconds. Add in salt and vanilla extract. Add milk one table spoon at a time, as you may not need it all.
Once the cookies are cool, create your nerd glasses!
Decorating Your Cupcakes
Focus on adding decorative elements that reflect the cover of the book. Think floral, swirls, and royalty. I added flowers, swirls and sugar pearls to my cupcakes. Bonus points for using wrappers that fit the book cover too!
